Happy Independence Day!
Jul. 4th, 2010 04:55 pmThe best part of this fourth of July weekend? Today at 2 pm when all the company left. (grin) But I'm TIRED!!!! So I can be grumpy-Scroogeish if I wish.
See, we went to a July 4th party last night. And I baked 2 apples pies for that. From scratch. That means rolling out four pieces of pie dough, people. Five, if you count that I had to re-roll one twice. SIXTEEN cups of apples sliced. (No, we're not going to consider that I have a handy-dandy apple peeler-corer-slicer that makes it really easy -- it's still time-consuming!) And I was having my own party here the next day (today) so the house must be cleaned and spiffed and shiny, the food bought and as much preparations as possible pre-done, because we were going to be home late and the party started early the next day (we ate at noon). We got home last night at almost 11 pm which is late for me to be out. I'm not one of those who can come home, jump into bed and fall asleep. So I sat up and visited withe son #2 who went with us and ended up spending the night here, then I went to bed and read until 1 AM. Yikes, Pam! So I did sleep in this morning, but then it was get up and rush and cut and slice and stir and mix and frost and WHEW!!!!!! Everything done by the time they got here. My cake was awesome, if I do say so myself and I'll have another piece soon, thank you very much. Store-bought fudge chocolate mix with a cheesecake frosting (milk, dream whip dry mix and cheesecake pudding mix, whipped until it's fluffy!) and sliced strawberries on top.
Now I can relax and get caught up and work on my jigsaw puzzle. And tomorrow is a holiday, too! YAY! Life is good.
